Chef Lawrence Letrero Joins Marisol’s Chef Collaboration Series

We are thrilled to welcome Chef Lawrence Letrero of Bayan Ko as the seventh featured chef in our ongoing Chef Collaboration Series at Marisol, which showcases signature dishes from some of the city's most talented chefs.

Chef Letrero brings a rich culinary background and a deep passion for blending cultural traditions to our table. With over a decade of experience in restaurants and hotels, Chef Letrero opened Bayan Ko in 2018 with his partner Raquel Quadreny. The cozy, twenty-four-seat Filipino-Cuban restaurant has become a beloved staple in the Ravenswood neighborhood, and their recent expansion with Bayan Ko Diner continues to celebrate the rich flavors of Filipino and Cuban cuisine.

For this exciting collaboration, Chef Letrero will feature his Filipino Pancit Noodle dish, a vibrant medley of stir-fried Canton noodles, baby bok choy, carrot, gai lan, shiitake mushroom, Chinese sausage, and a soy sesame sauce. This comforting and flavorful meal offers a blend of savory, umami-rich flavors—a reflection of Chef Letrero’s culinary roots.
